If I search for a customer, select them, (and hence open a ticket with them) I have a little grey box at the top saying:
"Customer: John Smith
Status: New"
or whatnot, if I select a table, I'll get a line saying "Table: B19"
but is there any way to get a line saying "Customer Phone: 555-5555" or "Customer Address: 10 Road Street, Townsville, PO5 7CO" which would autofill from customer data?

Have a look at the printer tags on the right hand side when your editing the printer template.
You can use any info stored for an entity By using {ENTITY DATA:X}
just repace X with the field name

Yhere is a new feature in V4 ( application subtitle) that allows you to place data at the top of the ticket.
