This would be good if it can be done from a customer base. Can I set up automatically, that the first drink [subject to certain types - say beers and local spirits] that an existing customer buys is free, after that all drinks are normally priced

It can be done by handling ticket states. Create a state for ticket called "Free Drink Promotion". For all new tickes it's value should be "Active". When beer added check ticket state and if it is active call related action to change order state to "Gift" and also change ticket's "Free Drink Promotion" to [Empty Value] to disable state.
