I have spent the last hour trying to remove the discount button on the payment screen but I can't. Then I tried in the user roles to remove discount permission but I can't, although I remember in V2, I could. Can you help please?

You can disable discount button from user role permissions but you can't remove it. It is possible with v3.
from Manage>Tickets>Calculation Selectors, remove discount.
